Dogajolo IGT Toscano, Sangiovese Cabernet 2005


Origin: Italy

Grape Variety: Sangiovese and Cabernet Sauvignon grapes

Tasting Note: The deep garnet with violet reflections. The two grapes varieties are dignified separately since they are ripen at different times. Toward the end of fermentation, they are blended and placed in small wooden casks where they slowly complete alcoholic and malolactic fermentation.

Food Matching: Given its fruitiness, Dogajolo can be paired with first courses and white meats, but shows at its best with full-flavored such as roasts, grilled-meat, cold cuts and Tuscan regional specialty.

Tasting note

The colour is clear ruby red. The smell is complex, wide, intense and persistent, touches of vanila, a felling of ripe fruit and spicies. Good structure and reveals the features of the vine-stocks it is made from.

Food matching

Red meat, game, and especially with the traditional grilled duck's breast, lamb in scottiglia.

In 1965, Umberto Cesari founded his winery in castel San Pietro Terme, Bologna, Emilia Romagna. We are in the Sangiovese wine region, the first Italian white grape to obtain this appellation. Umberto Cesari has been the first in Italy to believe in quality Sangiovese that reached some picks with Tauleto 2000.
